Feta is salted and cured in a brine solution (which can be either water or whey) for several months. Feta dries out rapidly when removed from the brine. We like all kinds but I really like a cheese called Boursin. It's a soft herbed cheese that is absolutely kick ass. It's great as a spread on cracker or a kick ass in a lot of prepared dishes as well. It is pricey but well worth it. Sadly, I have not been able to find any here in Okinawa.... :(

Nope...
I might have to request it but it also has a short expiration date as well. I'm a little leery putting in a special order for it.

Otherwise known as fetish cheese because the people that like it really have a fetish for it.
I particularly like fresh mozarella cheese, cheedar cheese, sharp cheddar cheese, swiss cheese, cream cheese, red cheddar cheese, mozarella cheese, parmesan cheese, camembert cheese, aged white cheddar.....hmm
Hell I am a cheddar head.!

I am fairly sure I've seen it or some imitation in one of the supermarket chains, or maybe at Oroku Jusco. I'll keep an eye out.
