I know you can cook it any way you would cook a squash, which can be numerous ways, and also in tempura. Does anyone have any other recipes for kabocha that I might not have though of or any Okinawan/Japanese recipes that use it?

I don't have a recipe for this one but I love Kabocha (pumpkin) Croquet.

And even better than that, I'll try and get the recipe for this one but..sometimes my wife makes this mac and chees w/ kabocha, ham, cream...I usually throw a little hot sauce on top and, MMMMMM damn!

Nothing on the internet? I can't think of any way I have had it other than soup or tempura.

Oooh, she also makes an awesome kabocha tart (pie) that tastes just like Cappricciosa's kabocha tart. That with a cup of their black coffee, mmmm mmmm!!!

I rather have some tried and true recipes from the JU crowd. I love the internet for recipes but sometimes you just aren't sure if it will turn out ok. Thanks for the recipes.

Well, I've decided on what I am going to do with the kabocha I have. I plan on halving it and baking it half way. Then I am going to pull it out and stuff the centers with chicken/mushroom/almond/cranberry herb dressing. Drizzle it with a cranberry vinaigrette and then finish baking. Pull out, let it cool for 10 minutes, top with more vinaigrette.

Sounds good?

Kabocha is much sweeter and pumpkin like. Kabocha is also called Japanese pumpkin and is often used in vegetable tempura. Togan, if I remember correctly, is a white firmer squash that has to be peeled.

For me, kabocha is similar to acorn squash.

I've only had togan in soup so far.
