Hey guys , this is my first post, with hopefully many more to come. I'm going to be going to culinary school soon and I have a chance to do an internship or possibly an externship overseas if all goes well. I'm in the beginning stages obviously, but I was hoping for some direction from any one who might know of any really authentic restaurants (high end is a plus, but authenticity is really what matters) on the island. Marriott would be a nice way to get there, but the real thing would be far better as it would be the authenticity that I was looking for as apposed to something that was potentially watered down.

Chances are these places that I'm asking about might not have web-sites, but a phone number or mailing address/physical address would be appreciated. Or hell, even an e-mail!

Thanks in advance guys!

EM/Costa Vista's Casa Verde (http://www.costavista.jp/en/restaurant/) has good restaurants that cook healthy foods.

The thing is about internships on Okinawa... Once upon a time, in order to get young people off their spoiled butts and into the workforce as useful citizens, the government sent a bunch of them to vocational school and put them in jobs, like sushi guy or hairdresser. Unless you go through a foreign restaurant or hotel, like you mentioned, it's best that you're actually in-country to get an internship or job in a restaurant. Have you tried auditioning for Top Chef maybe? ;) Good luck in any case. :D

Welcome to the forum. What culinary school are you going to? I've always wanted to go to culinary school. There are too many authentic restaurants to name. I'd imagine most of them would require you to speak/understand a fair amount of Japanese as well. As you mentioned, Marriott or one of the other resorts may be a better option as many of the staff at those places speak English for all the tourists that come through. Chances are they also are experienced local chefs with authentic roots. Some others on here with more experience on the island and with culinary arts may have some better advice.

Good luck.

Thanks for the reply man. Yeah I have to say that your right about the in state internship. It's just that the schools (NECI or CIA) that I'm looking at offer MULTIPLE internships, and then a mandatory externship before graduation. So 1-2 internships could be in the states if I desired but after that, if I want to branch out, I could go for an internship over seas.

And like I said the Marriot would be the easiest way to get there, but... a more authentic rout would be preferred. :) Going to the Marriot might be good way to set up connections though.. hmmm....
