At least five boys have been beaten in recent weeks by roaming bands of other high school students in the southern part of Okinawa.School officials say it appears there are several groups of boys seeking out others for unprovoked attacks.

Anyone know what schools or where exactly this has been happening? I live right on the south coast but haven't heard anything about this.

Saying that, the high school I work at has hired another security guy in recent weeks. Wonder if that's got anything to do with it...

I have no idea Soldave. But, one of my old girlfriends used to always comment on how bad the boys were in Yomitan and Ishigaki. According to her, high school boys in those areas have always had a ruffian kind of reputation.

Actually, it isn't Muku. People over here complaining about a kid being pushed around in school.

You won't have to do a lot of searches to find out about "School Shootings", back in the states recently.

Off topic, perhaps as it relates to where we live, but point the locals in the right direction, and they'll just blow this one off.

My lasagna is famous with many of my friends. YES.

Except when I make it it weighs a ton and plugs up most people for at least a week or so.:o

Is this your first time? There are some really simple recipes that taste great. Meat and cheese? Or do you want to add some veggies too?

Cheese is the most important thing to me. Riccotta cheese, mozzarella cheese, but have to be carefull because many cheeses have too much salt in them and that could make the lasagna salty to some people.

I usually buy my noodles from Jimmy's because they have an italian noodle that needs no precooking. Sometimes lasagna can get watery from the sauce, but these noodles cook while it is baking and soak up any excess juice and the lasagna turns out right each time.

Yep my first time. I am going to my friend's house tomorrow who has oven.

To make a long story short I bragged I could make lasagna now I am stuck.

I do want to do my best and I might learn something at the same time. :D

I would say meat and cheese for now.

I normally start by dicing one onion very fine, along with two or three cloves of garlic diced finely as well. In a hot fry pan put in some olive oil and sautee the garlic and onions until lightly browned.

If tomatoes are fresh I do it a bit differently but otherwise I then add a couple of cans of diced tomatoes and let simmer at low heat. In another frying pan I cook off roughly 1lb to 1 1/2lbs of lean ground beef, and then add to the mixture.

Then I add my spices, most of the time I will use oregano, thyme, sage and some ground black pepper and a bit of ground paprika. Add to taste, you can get away with it tasting "great" by adding more oregano, it will give the sauce a real savory aroma and flavor.

Let all of that cook for about 20 minutes or so at low heat.

While that is cooking I shred the cheese and layer the first noodles into my baking pan.

Then I will take some of the sauce spread it over the noodles and cover generously with the two cheeses. Then another layer of noodles, sauce, cheese, so on and so forth until the pan gets filled. Along the way, after every two layers or so I gently press down on the noodles and cheese to retain balance and conformity.

When it gets to the top I put a thin layer of sauce and pile on the cheese.

Then I bake it all in a 180C oven for about 30 to 35 minutes until the top layer is crusty and golden brown. After it is done, be really careful because it will be hot. Let it sit for about 20 minutes or so and then cut, serve and enjoy!

It sounds great. Can you get good mozzarella at Jimmy's too?

I've eaten some good meatless lasagna too. It doesn't make sense from a healthy eatin' standpoint though because you are going to have a lot of fat from the cheese.

I bought the cheeses from A Price wich is near Sakumoto straight out from Kadena's Gate five.

It wasnt cheap....if you go there you can get a garlic, basil, flavored mozzarella cheese already shredded, it is a bit salty though.

Oh forgot one spice in the mixture above.....basil. Fresh is best but the store bought packaged, dried type works well too.

I've made it with homemade italian sausage, brought the spices from the states for that. Got all sorts of recipes around the house somewhere for making all sorts of sausages. If you use italian sausage watch out for the amount of cheese you use because many italian sausages are high in sodium as well.. I assume you would be using the meat alone and not in the casing right?

Parmesan cheese is fine but it is very salty, you can sustitute cottage cheese for riccota, and if you cant get decent riccota, you can replace it with feta, or goats cheese as well. I would also try to stay away from any processed cheeses.

Parmesan I would only suggest from my experience for the top itself.

If you remember that real mozzarella is made from buffalo and/or sheep milk, this won't sound too weird: Living in a country where even the commissary couldn't get imported cheese, I drained local yogurt that was made from part cow's and part sheep's milk and used it in lasagna. The drained yogurt has the consistency of very thick sour cream. It all gets mixed up with the sauce and meat anyway and tasted great.

That sounds like a great subsitute here TLD. If you want to try this it is an idea as well.

I always wondered about the water buffaloes at Irimote Island. They should make buffalo mozzarella from their milk. What do you think an untapped market? :thumbup:

Not my idea of a good time but it was just a thought.:)

Thanks for the advice Muku I will see what I can come up with at the commissary. I am not much of a cook but would like to learn more. I never had the patience for it before but now that I am getting older I might take it up as a
new hobby. I just wish I had an oven.

Ah ha...you should be able to I am assuming, to find the necessaru ingredients at the commissary. Just one piece of advice, use the noodles that dont need cooking. If the commissary has them get them there otherwise Jimmys. They will save a lot of trouble when serving, and having a bunch of juice leaking all over the place.

My microwave has an oven as well so it makes it easier to cook.

Let us/me:D know how it turns out. Good luck. Half the fun in doing it, the rest is easy.....just eat.

And if worst comes to worst....remember tabassco.

Ohh I always thought about buying one of those. Uh oh something else to ask your advice about now. I will save that for another day.:thumbup1:
