Here's an awesome recipe too
Black Bean Dip
1 15 oz. can Giant Eagle or any black beans rinsed and drained
1/4 cup chunky salsa
1 small avacado peeled and pit removed, then chopped
2 tbsp. lemon juice
1/2 head of iceberg or romaine lettuce chopped and shredded
1-1/2 cups sour cream
1 cup shredded cheddar cheese
1 medium tomato seeded and chopped
1/4 cup of laurenti sliced black olives
1/4 cup red onion finely chopped
2 tbsp. fresh cilantro or chives chopped
tortilla chips
In a medium bowl, mix together the black beans and salsa and set aside. In a small bowl toss the chopped avocado with lemon juice to prevent browning and set aside. line the serving plate with lettuce, and top with layer of black bean mixture. spoon sour cream onto beans. sprinkle with avocado, cheese, tomato, olives, redonion, and cilantro, serve immediately with tortilla chips. If desired, cover tightly and refrigerate until ready to serve. Can be made up to 4 hours ahead.

If you like a hearty chili with a little kick to it, this is the chili to try..

I'm a bit of a chili snob. My recipie, give or take:

1 chopped onion
1-2 bell peppers
2 cans chicken broth
Some Red or Green chilis depending on heat
2 cans pinto beans (optional)
2-3 pounds sirloin steak
1 Jimmy Dean mild sausage
6 dried poblano chilis
3 dried anaheim chilis
4 dried chipotle
2 cans green chilis
salt, cumin, oregano
small square bakers chocolate

saute' onions, bell peppers and hot chilis in butter.
Add saute'd veggies to stock pot with 1 can chicken broth, bring to simmer. Add cumin and oregano to taste.

BBQ sirloin steak to medium using favorite BBQ method. Let set for 10 minutes. Dice and add to stock pot. Continue simmer.

Brown sausage, drain, and add to stock pot.

Clean all dried chilis (de-seed) and simmer for one hour with 1 can chicken broth. When soft, remove chilis and puree with one can green chilis. Add remaining broth while pureeing.

After stock pot with meat and veggies has been simmering for one hour, add chili sauce mixture. Simmer for another hour. Salt, cumin and oregano to taste. Add grated chocolate to taste.

When sirloin pieces are tender, add 1 can green chilis and optional beans. Simmer additional hour.

This batch never comes out the same due to the varying heat and taste factors of the dried chilis. I also add home made bacon, and any vegetable or meat leftovers I may have. Italian sauced meats (old marinara, meat balls, etc) are great to add.

You can win chili cook-offs with this, but it takes three hours mininum to cook. But it's the real thing.

While the picture you posted is of Vega. They switched the names in the US version becuase naming the boxer M.Bison sounded too much like Mike Tyson.:D

I have a new prime directive as of now.:thumbup: Any other preferred ways to cook bison?

Yeah that's what I meant. Here is a nifty chart explaining the name change:D. US version names are on the left, original JP names are on the right.

M.Bison = Vega

Vega = Balrog

Balrog = M.Bison

They have it ground, and they also have steaks. It's just a really good lean meat. Any way you would use beef you could just use this in it's place. It is a little pricy though, like $6/lb
