Okinawa scores three food dishes in Japan Top 100

Three uniquely Okinawan dishes have been chosen by a panel of culinary experts as among the 100 best in the nation.

Goya champloo, a vegetable stir fry centered on the bitter melon Goya, made the cut, along with Okinawa Soba, a noodle soup, and squid ink soup. More than 1,650 dishes were taste tested by the committee chosen by the Ministry of Agriculture, Forestry and Fisheries. The judges had to consider the value of the history and culture of the dish, as well as preservation of the foods. Seven cooking and tourism specialists were on the panel, which waded through five criteria to pick the 100 best in Japan.

There are more than 1,000 Okinawa soba restaurants in the Prefecture, and each restaurant has its own method of tweaking the dish to add individuality. The knowledge many areas have such variations made the judges’ decisions more challenging.
