Yaeyama fish paste regarded best in Japan

“Mozuku Kamaboko,” boiled fish paste containing mozuku seaweed and produced by Mamiya Kamaboko of Ishigaki City received the highest award from the minister of agriculture and fisheries at the 54th All Japan Kamaboko Fair held in Yamaguchi prefecture. Chikara Kinjo, the representative of Mamiya Kamaboko who once received the award fifteen years ago beamed with joy as he said that he feels great having received the award twice. “I would like to increase sales to everywhere in the nation as the taste is now recognized officially,” he said.

He started making this brand of kamaboko last year using Irabucha and Gurukun fish with mozuku seaweed. “Slimy feeling is the key to the nice taste, but to achieve just right texture is the difficult part,” he said.
