Fresh is the rule at Tortilla Factory

Life without tortillas is something Mark Esparza could never imagine, and with thousands of his Obbligato Restaurant customers in full agreement, he's expanded operations to have an actual Tortilla Factory, which provides tortilla chips to his restaurants, while offering a distinctly separate menu.

The newest family operation, Tortilla Factory is located near Camp Foster in the Futenma district of Ginowan City. It's easy to find, and well worth the journey. Tortilla Factory offers the choice of eating in, or take-out service, all with the fresh ingredients and tastes that has been the tradition of Obbligato since the first restaurant opened in 1981. Today, Tortilla Factory is based on ‘Chipotle' in America, a specialty restaurant-shop that caters to wrap foods.

It's the combination of fresh ingredients and excellent tortillas that make wraps so very special. Wraps don't use frozen meats or other products; everything's fresh and most often handmade. That's the case with Tortilla Factory chili, salsa and Pico de Gallo made with salsa, fresh onion and tomato. The tortilla dough comes fresh from Obbligato's factory in Uruma City.

While Tortilla Factory is affiliated with Obbligato, the resemblance stops at the door, where the menu is distinctly Tortilla Factory, and not shared with the rest of the Obbligato chain. The accent is on wraps, making the most of Esparza's expertise and knowhow with Mexican rice, carnitas or tacos.

The sauce is different, too. "We're going to use seasonal ingredients," says Esparza. "Any menu you choose is very good tasting, and customers can change ingredients in our wraps to suit individual taste." The Obbligato and Tortilla Factory owner says his goal is to expand operations into the franchise store business.

Tortilla Factory is located close to Camp Foster. Exit the base at the Legion gate, turning right toward Futenma. Travel toward Highway 58 and Tortilla Factory is located on the left side. Limited parking is available behind the restaurant, which accepts Japanese yen, U.S. dollars, and Edy. Esparza says credit cards are coming soon; perhaps within the next month or two.
